Cowboy Butter Steak
Serves: 2 | Prep Time: 5 mins | Total Time: 15 mins A sizzling steak seared to perfection and bathed in a bold, garlicky cowboy butter. Ingredients 1 lb bone-in ribeye 1¾ tsp kosher salt, divided 1 cup (2 sticks) unsalted butter, softened 2 garlic cloves, minced Zest of 1 lemon 2 tbsp. chives, thinly sliced (plus more to serve) 1 tbsp. Dijon mustard 2 tsp hot sauce 2 tsp horseradish ½ tsp black pepper ½ tsp smoked paprika ¼ tsp chili powder 1 tbsp. neutral oil Flaky sea salt Method 1. Mix butter, garlic, lemon zest, chives, mustard, hot sauce, horseradish, spices, and remaining salt in a bowl. Set aside. 2. Pat steak dry and season with 1 tsp salt. 3. Heat oil in skillet over medium-high. Sear steak 3–4 minutes until crusty, then flip, lower heat, and baste with 2 tbsp. cowboy butter. Cook 3–4 more minutes or until 125°F internally. 4. Rest, slice, and serve with flaky salt, extra butter, and chives.
