Picanha Steak with Chimichurri
Serves: 4 | Prep Time: 10 mins | Total Time: 30 mins A Brazilian classic, this steak is grilled to perfection and served with a zesty chimichurri. Ingredients Vegetable oil, for the grill 2 lb sirloin cap (Picanha), cut into 4 steaks (1½" thick) 2¼ tsp kosher salt 1 tsp freshly ground black pepper Chimichurri, for serving Method 1. Preheat grill or grill pan to high. Clean and oil the grates. 2. Curl steaks into a C-shape and skewer them. Season with salt and pepper. 3. Grill for 4–6 minutes per side, until a thermometer reads 130°F (medium-rare). 4. Rest 10 minutes, slice, and serve with chimichurri.
