The Sydney Steak Boyz descended on The Rocks - Sydney’s famous heritage, social and cultural precinct for our third outing. The chosen restaurant, “The Cut” is located in the historically significant Argyle Stores commercial building in The Rocks, an impressive example of a very early (1820s) commercial building in Sydney.
This classic New York-inspired steakhouse is set in a heritage cellar where exposed brick and sandstone walls compliment the exposed timber beams and wooden floorboards. The final touch in setting a high level of anticipation for a sophisticated medieval feast are the authentic leather chairs and butcher’s block tables. The eight Steak Boyz sat comfortably around the large butcher block table and we were promptly served by Patricia our Brazilian waitress. The madness and frivolity kicked in immediately. With no time for beer the Shiraz was called for without delay, the boyz were up for a good night.. FOOD The Cut serves prime cuts of Australian beef grilled over hardwood and charcoal, finished under a 650°C broiler. The signature dish is the four-hour roasted wagyu standing rib, served straight from the trolley, and is the most popular dish on the menu. More on that shortly.. Three of the boyz had Yellowfin Tuna and Wagyu Tartare appetizers (the rest were maximizing capacity) which were shared and all highly rated. From the time David our Russian official ‘preserver and presenter’ arrived at our table with his silver trolley to exhibit the four-hour roasted rib eye including portion guides, half the boyz were immediately sold on the 400g upper cut. Among the other cuts chosen were the 650g T Bone, 350g Riverine Scotch Fillet and two 250g O’Conner Grass-fed Fillets. The boyz rated their steaks as probably the best yet. The sides on the other hand didn’t really hit the spot and collectively we were a little disappointed here. SERVICE From the moment we were seated Patricia went unnoticed with the exception of her gorgeous accent when required. Our meals arrived with perfect timing and were cleared efficiently and importantly our wine glasses were never empty. A few of the boyz commented on the bluntness of the steak knives so potentially something for management to address. VERDICT Negatives aside from the moment you arrive at The Rocks, descend down the steep stairs to the Argyle Stores heritage cellar you are transported back in time. The ambiance generated here is second to none and coupled with great steak The Cut makes for a fantastic and fulfilling night out.
